My superpower is making meal prep easy. My single serve enchiladas are a fan favorite and today I'm throwing it back with a new beef and veggie packed version. I've been making enchiladas like this for years and had no idea that people would lose their minds when they saw me make my meals and these individually sized little casserole dishes. Your excitement over me meal prepping with these single serve oven safe dishes were the inspiration behind the new meal prep cookbook.
