Vom Herd nehmen und abkühlen lassen. Parallel 2–3 Knollen Knoblauch quer halbieren, mit etwas Öl in Alufolie wickeln und bei 180°C ca. 40 Minuten rösten. Das weiche Knoblauchfleisch aus der Schale drücken. Die braune Butter mit dem karamellisierten Knoblauch, gehacktem Schnittlauch, Rosmarin, Petersilie, Chiliflocken und Meersalz verrühren und über einem kalten Wasserbad luftig aufschlagen.
