Bevor wir starten, ein wichtiger Hinweis: Ein Sauerteigbrot ist nur dann wirklich gelingsicher, wenn du lernst, deinen Teig zu lesen. Temperatur, Mehlqualität und Reifezustand deines Starters beeinflussen die Gehzeiten enorm. Für dieses Brot arbeite ich bewusst mit moderater Hydration – ideal, wenn du noch Sicherheit im Handling gewinnen möchtest. Ziel-Teigtemperatur: ca. 25 °C Zutaten • 325 ml Wasser • 100 g aktiver Sauerteig (100 % Hydration) • 500 g helles Weizenmehl (backstark) • 10 g Salz • Reismehl zum Bemehlen Vorbereitung (am Abend vorher) 1. Sauerteig im Verhältnis 1:5:5 füttern (z. B. 10 g Starter + 50 g Wasser + 50 g Mehl) 2. Über Nacht warm reifen lassen. Hauptteig (am Morgen) 1. 315 ml lauwarmes Wasser mit dem aktiven Sauerteig verrühren. 2. Mehl zugeben, grob vermengen. 1 Stunde abgedeckt ruhen lassen. 3. Salz + restliche 10 ml Wasser einarbeiten. 4–6 Minuten von Hand kneten, bis der Teig glatt ist. 4. 30 Minuten ruhen lassen → erstes Dehnen & Falten. 5. Danach 3 Coil Folds im Abstand von jeweils 30 Minuten. 6. Danach solange gehen lassen, bis sich der Teig fast verdoppelt hat. Bei mir hat es 6 Stunden gebraucht. 7. Formen, ins Gärkörbchen legen. 8. 1 Stunde bei Raumtemperatur gehen lassen. 9. Abgedeckt 15–20 Stunden im Kühlschrank reifen lassen. Backen 1. Ofen mit Topf, Backstein oder Backblech mindestens 30 Minuten auf 250 °C Ober-/Unterhitze vorheizen. 2. Teig direkt aus dem Kühlschrank stürzen & einschneiden. 3. In den heißen Ofen schieben. Bei Variante ohne Topf für Dampf sorgen (Eiswürfel oder Wasser in eine mit vorgeheizte backfeste Schale geben). Backzeit: • 25 Minuten bei 250 °C mit Deckel • 20–25 Minuten bei 210 °C ohne Deckel Mindestens 1 Stunde auf einem Gitter auskühlen lassen.
