Beef Bulgogi Burrito Frozen Burrito Meal Prep Series Episode 3 Per Burrito (makes 11) 515 Calories 40g Protein 61g Carbs 11g Fat In this series - I’m showing you how to bulk prep high protein frozen burritos just like I do. The goal is to make a wide variety of flavor profiles, some familiar burrito flavors and a few fusion flavors, so that you never get bored when meal time rolls around Every recipe is high protein, low calorie and insanely delicious - the Stealth Health way 🫡 Ingredients: 48oz Top Sirloin Freeze 40-60 mins Slice thin Tenderizer: 4 tablespoons water 2 teaspoons baking soda Soak with meat for 15 minutes Bulgogi Marinade: 6 tbsp soy sauce 4 tbsp honey 3 tbsp gochujang 2 tbsp dark soy sauce 3 tbsp zero cal sweetener* 2 tbsp garlic purée 2 tbsp ginger purée 1 tbsp toasted Sesame oil 1 tbsp rice vinegar 1/2 yellow onion Salt & black pepper, to taste *optional Creamy Sriracha Rice: 240g sushi rice (dry weight) 400g plain skyr or Greek yogurt 50g sriracha Handful of cilantro or green onions Salt & garlic to taste 11 burrito tortillas Garnish with green onions and sesame seeds Low Cal Spicy Mayo: 150g low fat skyr or Greek yogurt 75g light mayo 15g gochujang 20g milk (or until desired consistency) Pinch of salt Sriracha to taste (optional) REHEAT INSTRUCTIONS: remove from freezer, wrap in a paper towel, microwave for 2-3 mins, then air fry at 375 for 6-8 minutes to crisp up your tortilla, or pan fry Notes: - The baking soda + water step is a common stir fry technique, “velveting”, which alters the pH of the exterior of thin sliced meat keeping it tender as it cooks. This can work with any cheap/typically tougher cut of meat and makes it super tender. Welcome to episode three of the frozen burrito meal prep these beef bulgogi burritos pack 40 grams of protein And only 11 grams of fat each and tops my low calorie spicy mayo They make for the perfect high protein meal when you're on the go the best part is this recipe makes 11 burritos That you can store frozen and start building your frozen burrito stash that looks just like mine. These tastes insanely good Just let me show you how to make them to keep this extra lean in the cost low We're going to the top starloin trim and toss in the freezer for about 30 minutes And then slice this thin as possible since this is a relatively tough cut of meat We're going to use a common stir fry technique soak the meat in a mixture of baking soda and water for about 10 minutes After that, we're going to pour over my homemade bulgogi marinade And I like to just let that marinate while I prep everything else once you're ready to cook at the meat over super high heat This only takes a couple minutes to cook so I want to make sure to get a really quick sear on the exterior cooking batches Add in some green onions, sesame seeds, and give that a good mix And this is optional, but I like to make a creamy, spicy, stancherized add all the ingredients shown on screen Give it a mix and combine then you're ready to assemble your burritos Add in whatever other toppings you'd like and then you're good to go, enjoy
