Honestly, I've outdone myself this time. Gluten-free, dairy-free, refined sugar-free, sweet potato cinnamon cake that is loaded with fiber, antioxidants, it's a lower glycemic index, and it actually tastes good. Don't even ask me how I lost the first clip, but we're gonna start with a blender or a food processor. You're gonna put one and a half cups of oats. That is one cup. Here is an extra half cup, one and a half cup of oats. I feel like that sounded so confusing, that I'm almost contemplating pouring this back in here and we're doing it. One and a half cup of oats. This is a sweet potato cinnamon loaf, so this is just sweet potato that I baked and mashed up, literally, mashed sweet potato, that's it. I'm going to put a cup and a half. I'm not gonna measure that out. That is gonna be a measure with my eyeball, but it's about one and a half cups of mashed sweet potato. Sweet potato is a powerhouse that has vitamin K, vitamin C. It's really good for your hormones. It's good for estrogen. It's good for brain health. Like the list goes on and on and on. Sweet potato is a super food, which is why I'm turning it into a loaf. But also this was gonna go bad. I had to do something with it. Kill two birds with one stone. Next up, two whole eggs. One tablespoon of vanilla extract. If you're like me and you're obsessed, you put one and a half, which is pretty much all I have left. Two tablespoons of nut butter of choice. I am going to use nutzo because I'm also trying to finish this off and move on. Half a teaspoon of baking soda, so this will rise. Generous pinch of salt because it's gonna enhance the flavor and make it taste good. Sweetener of choice. I'm using dates because they are high in potassium, magnesium, they taste good. They're lower glycemic index. They also give this a really nice, moist flavor. But if you wanted to, you could do like four tablespoons of maple syrup again. I think the dates also just make the cake texture so much better, but do which one? I put in six dates. If you like things super sweet, I would suggest eight to 10, but six is more than enough. And then last couple of ingredients. We're gonna put just a little smidge of nutmeg 'cause it is like a spice cake, if you will, but cinnamon is really the star player here. So obviously I've got some cylon cinnamon and I'm just going to put, I would say about half a tablespoon because again, this is a cinnamon sweet potato cake. You really want to taste that cinnamon. And then lid on and blend. This is what it looks like, or I'm yourself a loaf pan or whatever you plan to bake this in. I already greased this and then obviously we're just gonna pour our mixture inside. And then into the oven, through 75 for 22 minutes. Straight out the oven, this smells so freaking good. Now you can stop right here unless you're me and your extra. I'm going to top my sweet potato cinnamon cake with homemade caramel sauce, which I have a video up on my page showing how to make this. It is super easy and it's only got two ingredients. Then I'm gonna sprinkle even more cinnamon because aesthetics are important. And then lastly, I'm also okay. Gonna add some slivered almonds on top. You can add pecans, walnuts, whatever you like. You can also make some into the batter. I just like the way that this looks. Like seriously sweet potato cinnamon goodness. That's also gluten-free, dairy-free, anti-inflammatory, refined sugar-free. Like, I wish you guys could smell this.
