If you harvest some coffee cherries like this and run them through a machine that removes the outer layer of fruit, you'll still have the sticky inner layer of fruit called the mucilage attached to the coffee. But if you let it sit out in the sun, that sticky layer of fruit will dry into this nice golden brown color. This is called the honey process. When coffee is processed like this, it can lead to slightly sweeter and fruity or flavor profiles than if the mucilage had been removed before drying. But you'll only be able to taste that if the coffee has been carefully roasted and carefully brewed to best express its natural characteristics.
